Le uve vengono sofficemente pressate e il mosto fatto fermentare a bassa temperatura per ottenere aromi pi\u00f9 eleganti. La fermentazione dura circa due settimane; il vino viene poi mantenuto in vasche di cemento fino alla presa di spuma. Seconda fermentazione in bottiglia, secondo il metodo champenoise, senza sfecciatura. Durata delle presa di spuma: circa 60 giorni.
